Hot Corn

Beth's post about corn triggered my remembrance of this recipe. My Marine's girlfriend, Chrissy, recently moved here to TN from San Diego and brought this wonderful recipe with her. We have a huge family and each one of us is "famous" for one or two recipes, with it being mandatory we bring them to every family gathering, this one is hers.

Hot Corn
2 cans shoepeg corn, drained
1 8 ounce pkg cream cheese
1 stick margarine
1 tbsp chopped jalepenos (I use the sliced ones in a jar and chop them really fine)

Preheat oven to 350 and spray casserole dish with cooking spray. In microwave melt margarine and cream cheese together, mix well (I use a mixer so it is smooth). Add your drained corn and jalepenos and pour into casserole dish. Bake for 30 minutes. I love spicy foods so at times I get happy with the jalepenos, LOL, but it is delicious!!
