This is a great, easy recipe! My husband is the one who named it "corn-a-roni". The recipe is actually Mac and Corn.
Pre-heat oven to 350
Spray down a casserole dish with non-stick cooking spray
Add:
1 can of creamed corn
1 can of regular corn (juice and all!)
1 stick of margarine cut up into chunks
1 cup of elbow macaroni
8 oz of Velveeta cubed into chunks (it's about 1/4 of a loaf of Velveeta)
Mix together
Cover and bake for 30 minutes
Uncover and stir
Place uncovered dish back in the oven for another 30 minutes
Makes a great side dish of about 8 servings, or a substantial meal for 4.
It's a super easy recipe! It really only takes a few minutes to throw together! And it comes out surprisingly good!
