Banana Salad

This is a family recipe that I was just re-introduced to. I've made it several times since then.

4-6 medium bananas
1/2 cup sugar
1 Tbsp flour
1 cup milk
1 cup of chopped peanuts (more if desired)

Combine sugar, flour and milk in a microwave safe dish. Heat in intervals of 2 minutes, stirring after each interval until mixture is thick and bubbly. Watch carefully because it can bubble over quickly.

In 2 Qt bowl/dish, cover bottom with half of sliced banana. Pour half of mixture over bananas and spread evenly. Sprinkle half of the peanuts over the mixture. Repeat with remaining bananas, mixture and peanuts. Chill

I usually use 4 bananas, it makes the dish creamier.
