One staple at every holiday supper for us is Green Bean Casserole...the frozen green beans w/cream of mushroom soup and French's Onions on top.
Also, with ham, I usually serve sweet potatoes. Not as heavy as mashed potatoes/gravy and they complement the ham well. You could also make a sweet potato pie or baked yams with marshmallows.

We're having something called sesame chicken, it's good and easy. It can be served cold (I prefer it this way) or hot and doesn't take too long to prepare, you just use chicken breasts. Add whatever you want to the side, mashed potatoes, rice, pasta, etc. I can find the recipe if you're interested.
Even though I don't like them, how 'bout beets for veggies? Also try green beans (as mentioned earlier.) Alright, maybe it's a bit off the beaten path for easter, but it's only suggestions. |

We will be having a roasted leg of lamb with fresh rosemary and garlic (possible cooked to a delicious medium rare on the grill) and a pork roast (we will have quite a few over for dinner)
I know hubby is cooking sweet potatoes, but I'm not sure how. One of my favorite veggies is asparagus. It is just starting to come in to season. You can serve it just steamed with a little fresh lemon juice squeezed on top, or, after steaming it, saute it in a little olive oil, fresh garlic, scallions and again fresh lemon juice. YUM!! Not sure what else, but Hey, we until Sunday to figure it out!!

Easy, great veggie casserole. Everyone loves this and asks for the recipe:
Take 2 regular size (8 OZ?) packages frozen veggies - cauliflower, broccoli and carrots - it is called California mix. Thaw and drain them, put in casserole dish. Melt 1 lb American cheese with one stick of butter. I usually get a 1 lb block from the deli and cut it into chunks to melt it. Mix the cheese into the veggies. Crush 1 sleeve Ritz crackers and mix with 1 stick melted butter. Put crumbs over the top of the veggies and bake at 350 for about 25 minutes. Not at all a diet food, but so yummy! We will go to the Easter Vigil mass Saturday night, then let the kids find their baskets Sunday morning and find the eggs in the backyard (weather permitting). Head to the inlaws for breakfast and then to my aunt's for dinner (Yup, I'm bringing my veggie casserole, by request) |

All of it sounds scrumptous - lamb on the grill, fresh rosemary, fresh asparagus (now I can't wait until ours come up) with garlic, olive oil, fresh garlic, scallions and fresh lemon juice. Sounds like my kind of grub. ![]() Have an aweful hungry coming on now! |

We are all going the the Sheridan for Easter dinner....in the Grand Ballroom they are having Easter dinner complete with a carving station AND the Easter Bunny will be there for the kids and a Easter egg hunt. I hate all the prep work for holidays, at this point in my life I like to sit back, relax and enjoy the people I am dining with, I dont want to have to worry about cooking, serving and cleaning up.

I'm missing home at the moment (it's a 13 hour trip ... much too long to make the trip for the weekend) ... Easter involves a big family gathering (about 30 people) at a relative's house. And a huge feast! Enough to feed an army! Ham, turkey, home grown veggies (frozen/canned from last year's bounty -- peas, corn, potatoes, green beans), homemade cottage cheese rolls (an all time favorite!! much better than they sound at first), fresh baked bread, various side dishes since it's kinda potluck style, and scrumcious desserts (homemade cakes, pies, ice cream, brownies, cookies, etc). And some good ole family fellowship around the table! It's a wonderful experience to have family around at the holidays!
But since home is so far, it's just hubby and I. I think we're gonna avoid all the hassle and eat dinner out on Saturday and then just enjoy morning worship together and then take a day off to recoop from our busy schedules. I'll help out at church with the kids easter egg hunt and we'll have a pancake breakfast at church, too. Then morning worship service. I'm not brave enough to get up for sunrise service. Maggie- for fruits vegetables I would take advantage of the firsts of the season -- fresh corn on the cob should be available, along with strawberries, peaches, and nectarines. And beware that lettuce prices are on the rise (I paid $3 for a bag of premixed salad that is usually only $1.50) Hope y'all enjoy family, friends, and worship this weekend! -Beth

Oh my gosh!! Can you believe the price of lettuce? It's worse than gas prices here. BUT - you can get a HUGE bag of salad mix (iceburg, carrots, etc.) at Sam's Club for $2.98 or you can get a 2 lb. bag of mixed greens for $3.98.

I dislike ham so we are having turkey which is usually a big hit. I tested a new coconut pie recipe the other day, and it was extremely well received, so there will be a coconut pie. I always have deviled eggs as one of the appetizers because of all the boiled eggs. I haven't decided between asparagus or sweet potatoes...maybe both!
